The apparently confusing and inconsistent use of the term 'malt liquor' has to do with the vagaries of American alcoholic beverage regulations, which can vary from state to state. Good luck man, and let us know if you have anymore questions. You want it to dry out as much as possible. So you're basically looking at something like 50-60% barley, and 30-40% adjunct. Malt liquors are most commonly lagers (I don't know of any that are ales). That would be a much better choice than US-05. You mention you have the ability to lager. Trust me, the cereal mash is worth it if you have the time. Consider doing a cereal mash with corn grits or rice instead of the flakes if you want a more authentic malt liquor. You also would probably want to increase your adjunct to about 30-40%, maybe more. The adjuncts used are normally sugar, corn, and/or rice in addition to 2-row or 6-row barley. As far as I know, honey isn't really used in malt liquors, although some could be a nice touch. It'll contribute too much flavor and sweetness for the style. I would lower the IBUs to about 15-20 as well, and cut out the Caramel malt. First off, you would want to cut out the finishing hops completely. Since it is not alcoholic, mail order and shipping across state lines would net be a problem. Here in California, we get Virgil's in 5 liter kegs. Carbonating non-fermented sugar based beverages is tricky if you cannot force carbonate. US-05 is pretty clean and works down into the high 50 degs.Īs for the root beer, unless you have made it before successfully, I would get some store bought root beer. If you can lager, that would make a more typical Malt Liquor. You would want to up the nugget hops a bit too. If you want to do it in the Mickey's Big mouth tradition, you could up the ABV with additional pale malt and/or corn plus honey or plain table sugar as required.
